The words I shared yesterday were all about stepping through the gentle threshold of September, welcoming the subtle warmth of spring, and allowing ourselves to step into a new rhythm, making today all about absolute, unadulterated sensory joy. Today, we pause to celebrate and honor one of the most extraordinary, nourishing, and infinitely versatile gifts in nature: the humble, vibrant, and wildly generous coconut.
 
There is something undeniably magnetic about coconut palms. Watching them sway effortlessly against a coastal horizon, their long fronds dancing in the ocean breeze, they embody the very essence of freedom, warmth, grounded presence, and tropical ease. Known reverently across many indigenous and island cultures as the “Tree of Life,” the coconut palm is a true marvel of the natural world because every single part of it serves a vital purpose. Nothing is wasted.
 
Beyond its iconic role in our kitchens, coconut oil has completely revolutionized natural beauty routines—deeply nourishing our skin, restoring shine to hair, and offering a rich, soothing oil for daily self-care and somatic grounding rituals. The sturdy inner shells are carved into sustainable bowls and utensils, the fibrous outer husk coir is woven into eco-friendly ropes, mats, and planting media, and the sprawling palm fronds provide essential shade, shelter, and woven materials.

Speaking of flavor memories, my personal journey with today’s baking actually traces back to a very specific, unexpected spark of culinary influence during a trip to Fiji back in 2016. I remember ordering an impossibly refreshing coconut and pineapple slushie from a local KFC in Nadi—a casual, icy, street-side treat that captured the tropical heat and island breeze in one perfect sip. That vibrant pairing of sweet pineapple and smooth coconut stayed with me for years, ultimately serving as the creative springboard for the tantalising and tasty tropical treat I promised to share with you today!
 
I know so many of you have been hanging out for this recipe since the blog I wrote yesterday! I pulled a fresh, golden batch out of the oven this afternoon, and the aroma drifting through the house right now smells like pure paradise.

The Ultimate Tropical Coconut & Pineapple Slice 🍍🥥
(With a Zesty Lime Glaze)
No World Coconut Day or spring blog post is complete without something sweet to savour. This slice is pure sunshine in a baking pan—combining rich coconut cream, juicy crushed pineapple, and a crisp, citrusy lime glaze that immediately transports your senses to a tropical morning.
It is simple, deeply comforting, and best shared with a long hot drink and great conversation.
 
🛒 Ingredients
The Slice Base
  • 185g butter, softened
  • ¾ cup (165g) caster sugar
  • 3 eggs
  • ⅔ cup (50g) desiccated coconut
  • 1¾ cups (260g) self-raising flour, sifted
  • 270ml coconut cream
  • 440g can crushed pineapple, very well-drained
  • ⅓ cup (25g) shredded coconut (for the top)
The Zesty Lime Glaze
  • 3 cups (480g) icing sugar, sifted
  • 40g butter, melted
  • ⅓ cup (80ml) fresh lime juice (approximately)

Method

  1. Prep the Oven & Pan: Preheat your oven to 180°C. Grease a 22cm x 32cm rectangular slice pan and line the base and long sides with baking paper, allowing the paper to extend 5cm over the sides for easy lifting later.
  2. Cream the Base: Using an electric mixer, beat the softened butter and caster sugar in a bowl until pale, light, and fluffy. Add the eggs one at a time, beating gently until just combined after each addition.
  3. Fold & Combine: Transfer the mixture into a large bowl. In two gentle batches, stir in the desiccated coconut, sifted self-raising flour, coconut cream, and drained crushed pineapple until beautifully mixed. Spread the batter evenly into your prepared pan.
  4. Bake to Perfection: Bake for 45 minutes, or until a wooden skewer inserted into the centre comes out clean. Allow the slice to rest in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely.
  5. Craft the Glaze: Sift the icing sugar into a small heatproof bowl, then stir in the melted butter and just enough lime juice to form a soft paste. Place the bowl over a small saucepan of gently simmering water, stirring until the icing becomes warm, smooth, and easily spreadable.
  6. The Final Touch: Working quickly, spread the warm lime glaze evenly over the cooled slice. Sprinkle generously with the shredded coconut, let the glaze set, slice into squares, and enjoy every single bite!
